Banana Protein Pancakes

Banana protein pancakes
 
 

Ingredients

2 cups oats

2 bananas

4 eggs + 6 whites

teaspoon cinnamon

2 scoops protein powder

2 tablespoons flax meal

Almond milk (optional)

How to make the magic

Mix everything in the blender on medium speed until well combined

Add almond milk as required if you want a thinner mix

Heat a nonstick pan on low heat

Add a little coconut oil

Pour 1/4 cup of the mix into the pan

Cook until small bubbles begin to form

Flip and cook the other side

Repeat until there's no more mix left

Serve with your favourite topping - I like almond butter and fresh blueberries

Serves 4

Note, the pancakes will keep in an airtight container in the fridge for 3 days. You can eat them cold or warm them slightly before serving.
